The school year is about to start. Are you ready for the busyness that comes with evening school activities and homework? Do you wish for an easy way to make meals for your family so that you don't have to resort to the fast food drive-thru?
I can relate. With three boys and a farmer, Fall is a busy time of year with soccer practices, harvest and schoolwork. My goal is to have a meal (or leftovers) available weeknights and that we eat together as often as possible. Over the years, I have found several meals that I can make pretty quick and easy or can be made ahead.
Here are my Top 10 Easy Meals for Family Dinners:
- Steak Bites — Put in marinade the night before and they make-up in minutes for dinner.
- Mozzarella Meatballs — Meatballs with a cheese center surprise.
- Cheeseburger — Pre-made patties make burgers even easier. The hardest part is remembering to thaw them out! No recipe needed!
- Pizza Pasta Casserole — Put it in the crockpot for 3.5 hours and it's ready to eat. Makes great leftovers too!
- Easy Beef Lasagne — Easy to throw together and the kids love this one. Throw frozen bread sticks in the oven and corn in the microwave and it's a meal!
- Sloppy Joe Sandwiches — Double the recipe and have dinner AND leftovers that the kids can fix themselves!
- Pork Sausage Farfalle — It's an awesome one-dish meal. Protein, pasta and some vegetables snuck in.
- Margarita Pork Chops — It sounds fancy, but it is SO easy! Marinate ahead of time so that all you have to do is thaw and grill. Instant potatoes and brussels sprouts in the air fryer make an awesome meal!
- Stroganoff — This might be my boys' favorite comfort meal. Quick and easy to make. Throw crescent rolls in the oven and steam a bag of green beans and you have a meal!
- Pepperoncini Roast (Shredded) — If you don't think you like to eat beef roast, try this and then tell me what you think. We make this and shred it for tacos or just eating. SO easy and SO good!
Try these to make your school-night meal prep a little easier. Hopefully the hardest part is remembering to thaw the meat!
