Pork Fried Rice

Simple ingredients. Makes enough for leftovers. Teenage-boys approved!

Ingredients

  • 3 (3.5-oz) pouches boil in bag brown rice (I used 1 cup jasmine rice)
  • 1 lb County Line Meats salt & pepper pork sausage
  • 1/2 onion, chopped
  • 2 Tbsp vegetable oil
  • 1 (12-oz) pkg frozen peas and carrots, thawed
  • 3 large eggs, lightly beaten
  • ¼ cup less sodium soy sauce

Instructions

  1. Cook rice according to package directions.
  2. Meanwhile, cook pork and onion in hot oil in a large skillet over medium-high heat 6 minutes. Add peas and carrots; cook 5 minutes or until tender. Add rice; cook 2 minutes.
  3. In a separate skillet (or if you have enough space, push rice mixture to the side). Cook the eggs, stirring constantly, until scrambled. Combine eggs with rice mixture; stir in soy sauce.
