French Onion Beef Roast Soup

Delicious onion soup with beef roast.

Ingredients

  • 3-4 pound chuck roast
  • 2 tablespoons vegetable oil
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 4 yellow onions, halved and thinly sliced
  • 4 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 6 sprigs fresh thyme
  • 1 French baguette, cut into 1/2 inch slices
  • 1 cup gruyere cheese, shredded

Instructions

  1. Season the roast with salt, pepper, and thyme. Let the meat rest.
  2. In a large skillet over medium heat, heat the oil until shimmering. Add the beef and brown deeply 3-4 minutes each side.
  3. Place roast and remaining ingredients, except baguette slices and cheese, in the slow cooker.
  4. Cover with lid and cook for 7-8 hours on low, or on high heat for 3-4 hours, until meat is fork tender.
  5. Turn oven to broil. Arrange baguette slices on a baking sheet and top with cheese.
  6. Broil bread until edges are browned and cheese is melted.
  7. Serve French Onion Pot Roast with cheesy baguette toasts.
