My FAVORITE Christmas cookies! It might be because they are mostly butter and sugar and SO yummy.
This recipe has been handed-down from my grandma, and my mom and I make them every year. These are a staple on the Christmas cookie tray. My mom used to have a cookie press that had a crank, instead of a lever to push the dough out of the tube. It actually made it easier to make the cookies identical.
The Kitchen Aide mixer and the press are critical for making these. Trust me, the 1st year I tried to make these without a Kitchen Aide mixer, did not go well!
Ingredients
- 1 1/2 cups Butter
- 1 Egg
- 1 cup Sugar
- 1 tsp. Vanilla
- 1/2 tsp. Almond Extract
- 3 1/2 cups Flour
- 1 tsp. Baking Powder
- Optional - Food coloring
Instructions
- Sit out butter 30 minutes before you are ready to start.
- Set oven to 400 degrees.
- Cream butter and sugar in a stand mixer. Start on low speed and speed up occasionally.
- Add egg, vanilla and almond extract. Beat well.
- Sift flour and baking powder together in a separate bowl.
- Add food coloring to the butter mix, if desired. You can add more during the next step too, if you want to.
- Gradually add the flour and baking powder mixture to the mixer. Have the mixer on low speed while adding flour and then speed up to get it well mixed. Mix until all of the flour mixture is added and the dough is smooth.
- Force dough into cookie press.
- Press cookies onto an ungreased cookie sheet.
- Bake at 400 degrees for 5-6 minutes.
- Remove from oven and get cookies off the cookie sheets to cool.
