Perfect game day food. Easy to make ahead. Fun to eat!
Ingredients
- 2 lbs. County Line Meats Ground Beef
- 1 tsp. olive oil
- 1 onion, diced
- 1 clove garlic, minced
- 2 Tbsp. chili powder
- 1/4 tsp. cayenne (optional)
- 1 tsp. ground cumin
- Salt to taste
- 1-1/2 cups beer
- 1 can (10 oz.) diced tomatoes and green chilies, drained
- 1 can (8 oz.) tomato sauce
- 2 Tbsp. cornmeal (optional, if mixture is not thick enough)
- 1 bag (8 oz.+) corn chips, or individual single-serve bags
- 1-1/2 cups grated cheese (we like Taco mix shredded cheese)
Instructions
- Heat a large nonstick skillet over MEDIUM heat until hot. Add ground beef and cook 8-10 minutes to brown, breaking beef into small crumbles and stirring occasionally. Remove the beef, drain and set aside.
- Add olive oil and onion to skillet; cook until nicely browned.
- Add ground beef back in, along with garlic, chili powder, cayenne (if using), cumin and salt. Stir to combine.
- Add in the beer, diced tomatoes and green chilies, and tomato sauce, then bring to a low simmer. Cover with a lid and allow to bubble and simmer so the sauce reduces and thickens and the flavors intensify, about 1 hour.
- After an hour, stir through the cornmeal, which will help thicken the sauce. If it's too thick, add a little water; if not thick enough, continue to simmer until desired consistency is reached.
- Put corn chips in a bowl or use single-serve bags. Spoon the chili on top of the corn chips, then top with a sprinkle of cheddar cheese. Allow to melt slightly, then serve and enjoy.
- You can keep the ground beef mixture warm in a slow cooker with corn chips and cheese on the side for party-goers to build their own.
